    Ingredients

    Instructions

    1. Heat veggie broth/oil in large pan or pot. Add in Eggplant, green beans, and carrots whilst adding a portion of the spices.
    2. Wait a few minutes then add in onion and more spices.
    3. When things are about 3/4 cooked add in tomatoes and stir on low/medium heat for 10-15 minutes.
    4. Serve with pasta and baked tofu and enjoy!
