Ingredients
- 1 eggplant chopped
- 2 handfuls green beans chopped
- 3 carrots chopped
- 2-4 tsp cumin
- 1 package (12 oz) tofu cubed and baked (see baked tofu recipe)
- 1 28oz can crushed tomatoes (or processed fresh!)
- 1/2-1 package (16oz) brown rice and quinoa pasta cooked
- 2-3 tbsp coriander
- salt and pepper to taste
- 1-2 tbsp garlic powder
- 1-3 tsp basil
- 3-4 tbsp veggie broth as a subtitute for oil
Instructions
- Heat veggie broth/oil in large pan or pot. Add in Eggplant, green beans, and carrots whilst adding a portion of the spices.
- Wait a few minutes then add in onion and more spices.
- When things are about 3/4 cooked add in tomatoes and stir on low/medium heat for 10-15 minutes.
- Serve with pasta and baked tofu and enjoy!
