Ingredients
- 1/2 c dates or erythritol (about 4tbsp) chopped
- 3 3/4 c rolled oats
- 1/4-1/2 c shredded coconut unsweetened
- 2 tsp cinnamon ground
- 1/8 tsp salt optional
- 3 egg whites or chickpea water whipped
- 1 tsp vanilla extract
Instructions
- Preheat oven to 225 degrees F (110 degrees C). Line a baking sheet with parchment paper.
- Combine dry ingredients in a large bowl.
- Beat egg whites/chickpea water in a glass, metal, or ceramic bowl until stiff peaks form. Beat in vanilla extract. Fold whites into the oat mixture. Spread on the prepared baking sheet.
- Bake in the preheated oven, stirring every 20 minutes, until granola is crispy, about 1 hour.
