Crockpot Thai Yellow Curry

Ingredients
- 1-2 c veggie stock or broth
- 1-2 tbsp yellow curry paste
- 1 tbsp soy sauce
- 1 tbsp fish sauce or soy sauce
- 1 tbsp ginger minced
- 1 block tofu (or 1lb chicken)
- 4 large potatoes quartered
- 1 onion chopped
- 1 can (14oz) coconut milk
- 1 cilantro/lime garnish and additional flavors
- 2 cup kale chopped
Instructions
- Place all the ingredients, except for the coconut milk, garnish and kale, into your crockpot and stir together well. Set your crockpot to cook on high for 4 hours.
- After 4 hours, stir in the coconut milk kale and let it sit while you prepare the rice, cauliflower rice, noodles or quinoa to serve.
- Top with a little cilantro, lime, and, if you like it extra spicy, some chopped chili peppers. Serve with rice and/or noodles
