SHIITAKE GINGER BROTH

Ingredients
- 8 cups water
- 2 stalks celery
- 1 onion and/or leek quartered
- 1-3 cloves garlic halved
- 1 small knob ginger max 1/2 inch or smaller
- 1 oz dried shitake mushrooms
- 1 tbsp tamari or soysauce
- 1 stalk lemongrass optional
Instructions
- Put all ingredients except soy sauce into crock pot and set to low for 8-12 hours (the longer the more flavor)
- When done add the soy sauce to taste
