Hainan Chicken Rice (Pressure Cooked)

Ingredients
- 2 lb chicken breast or thigh defrosted and lightly salted
- 1.5 cups brown rice
- 1.75 cups chicken broth
- to taste soy sauce or tamari
- 1-4 slices ginger thin long slices
- 1-2 tbsp crispy onions optional for additional flavor
- 1-3 tbsp coriander/cilantro for garnish
- 5 spring onions chopped
- 1/2 cucumber chopped
- to taste sweet (thick) soy sauce healthy boy brand Sweet soy sauce
Instructions
- Add rice, chicken broth, sliced ginger, garlic cloves, and crispy onions(optional) to instant pot. Then place chicken on top.
- Close top and set to pressure cook on HI for 20 minutes
- Optional Step: One popular side topping can be made If you chop up more ginger and use the chopped green parts of the onion, you can heat up some vegetable oil (2-3tbsp) in a pan and add the veggies. Then put into a heat safe container.
- Serve with cucumber, cilantro, chopped spring onions. The sweet sauce is common sauce for this dish, if you don't have any you can mix honey with soy sauce.
