Sugar Cookies Recipe

Ingredients
- 1/2 cup earth balance
- 1 cup swerve sugar alcohol granulated
- 2 egg or egg replacement
- 1 tbsp soy milk
- 2 tbsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1.5 cup whole wheat pastry flour
Instructions
- Preheat the oven to 350ºF. Line baking sheets with parchment paper or liners. Start by beating the sugar and butter together. Add the eggs one at a time.
- Next, add the milk, baking powder, vanilla and salt.
- Start adding the flour, 1/2 cup at a time, until the dough is soft but not overly sticky. You don’t want it to stick when you roll it out!
- Refrigerate the dough for 20-30 minutes.
- Sprinkle flour on your counter, then roll out the dough. You don’t want to roll them too thin, because then your cookies will be hard.
- Cut your shapes in the dough, then re-roll the scraps. Just remember that the re-rolled dough will get tougher and tougher the more times you re-roll it. Bake the cookies, one sheet at a time, for about 8 minutes, or just until set. Do not overbake
