Roasted Pumpkin Seeds

Lightly Roasted Pepitas

    Delicious seeds that are a good source of omega-6 fatty acid and iron for that matter ;)

    Ingredients

    Instructions

    1. Preheat oven to 250°F. Remove seeds from pumpkin.
    2. Spread them out evenly on a paper bag and let them dry out.
    3. Place the seeds in a single layer on a cookie sheet, dab them with a bit of oil (and season now or after). Light roast them in oven for about 15-20 minutes.
    4. Sprinkle with your own spices/seasoning if you haven't already. Seeds can be eaten whole or dehulled. Enjoy ^_^
    5. Other Ideas:
      Sprinkle pumpkin seeds on top of mixed green salads.
      Grind pumpkin seeds with fresh garlic, parsley and cilantro leaves. Mix with olive oil and lemon juice for a tasty salad dressing.
      Add chopped pumpkin seeds to your favorite hot or cold cereal.
      Add pumpkin seeds to your oatmeal raisin cookie or granola recipe.
      Add to soup
